It’s like chocolate and peanuts are made for each other ❤
I love peanut butter and I love chocolate and when it’s put together it’s like this beautiful magical love! This is a gluten-free recipe, of course if you want you can use wheat flour or spelt flour etc if you would rather – it wont take away from the awesomeness of this slice =)
Use organic, fair-trade/local ingredients where possible!
In a bowl mix the following ingredients until mixed well, knead as required push the dough mixture into a baking tray (I used a brownie tray, you will need a bit of depth for the other two layers on top) line the tray with baking paper this makes taking the base out to cool easier, poke the dough all over with a fork, pop the base into the oven preheated at 180 fanbake to cook for about 20-25 minutes.
Put on a cooling rack to cool down.
1 cup of rice flour
1/3 cup of chickpea flour
2/3 cup of coconut oil
1/4 cup of brown sugar
2 tablespoon of water
1 teaspoon of baking powder
1/2 t salt
For the peanut layer blend the following ingredients until mixed well.
3/4 cup of rice malt
1/4 cup of coconut cream
1 whole vanilla bean
Next briefly blend in 250g of peanutbutter (about 1 cup) I used crunchy peanutbutter (that had a little sugar & salt added, you can use plain peanutbutter if you like)
Spread the mixture on top of the base (I put the base still on the baking paper back into the tray)
Pop it into the freezer to set for a while, as you melt the chocolate!
In a double boiler melt 200g of your favourite dairy-free & fair-trade dark chocolate, spread the melted chocolate on top of the peanut layer and put it into the freezer so the chocolate sets before you cut it, if you do not want the chocolate to crack (as it is pictured) you only need to put the slice in the freezer for about 10-15minutes before you cut it (-= I like the rustic cracked chocolate though (left it in for about 35 mins).
Feel free to garnish the slice with roasted salted peanuts if you want to make it a little more fancy 😉
You can keep this slice in a container in the freezer (it will last for ages unless you eat it all first), I think it tastes even more awesome if you eat it at room temperature though, the peanut layer is super yummy and gooey!!!
