Raw Chocolate Cheesecake drizzled with Raspberries

This Raw Cheesecake is so deliciously tasty and easy to make! It is a great cake to take to a party, or to keep in your freezer sliced up to snack on, for when it is a hot day and you feel like something sweet and refreshing! I made this cake for an Organic Raw Food Demonstration I did at Belgrave Library last week! It was enjoyed by everyone I believe! 😉

Use organic, fair-trade/local ingredients where possible!

26 Chocolate Raspberry

Base:
In a food processor or high-speed blender blend the following together until the mixture can be squeezed together by your fingers and it holds =)
2/3 cup of raw almonds
1/2 c sultanas or raisins
2/3 cup of shredded coconut
2 medjool dates

Press into a spring-form tin lined with baking paper at the bottom (this makes it easy to take the cake off the base of the tin and move it onto something else for presentation/cutting)

Chocolate Cream:
Blend the following together until smooth:
1/2 cup of water (or coconut water)
5 medjool dates
1/4 cup of raisins or sultanas
1/2 cup of melted cacao butter
1/4 cup of coconut oil
1/4 cup of cacao powder
1/4 teaspoon of salt

Once the mixture is smooth add in:
2 cups of raw cashews that have been soaked in later at least over night, 24 hours would be best, make sure they are rinsed well.
Blend all the ingredients up until creamy and smooth, spread the mixture on top of the base.

Pop the cake into the freezer to set, depending on the size of the tin you use it can take between 30minutes to 1 hour and a half to be set enough to take the cake out of the tin easily.
To take the cake out of the spring-form tin, I use a warm cloth to wipe around the outside of the tin, it helps melt the inside of the cake of the walls of the tin and is quite easy to push out!

Now time to decorate!
1/2 cup or more if you like! fresh or frozen but defrosted raspberries
Mix with 1/4 cup of coconut nectar/syrup

Spread over the mixture top of your cake.
Sprinkle with raw cacao nibs if you like.
