Raw Chocolate Cheesecake

This cake is so sweet chocolaty and delicious, It is the perfect treat to make for summer, pop it sliced in the freezer and take it out and defrost it as you need to! Mmmm chocolate ❤
Use organic, fair-trade/local ingredients where possible =)

22 Raw Chocolate Cheesecake

In a blender pulse/blend the following until you get bread crumb sized peices:
1 cup of raw almonds
1 cup of raisins
1 cup of shredded coconut
¼ cup chia seeds
Once combined well press the mixture into a spring form cake tin.

Next blend the following until smooth:
2 cups of soaked and rinsed raw cashews (let the cashews soak in water for at least 24 hours, but if you a tight for time 1 hours will be okay)
2/3 cup of agave
¼ cup of cacao
1/3 cup raisins
2/3 cup melted coconut oil
1/3 cup melted cacao butter
¼ filtered water
Pinch salt

Spread the mixture on top of the base, put the cake in the freezer to harden up quickly or pop it in the fridge if you have more time, once set remove the cake, decorate how you wish, strawberries, chocolate sauce, and rose petals etc work well 😉 be creative, have fun and enjoy unbaking!
